Did you know you can make your own marshmallows? I didn’t know that until I came across a recipe for it. It sounds yummy and won’t cause you to use your mortgage life insurance.. I promise!
1/4 cup cornstarch
1/3 cup powdered sugar
1 envelope unflavored gelatin
1/3 cup water
2/3 cup granulated sugar
1/2 cup light corn syrup
1 pinch salt
1 teaspoon vanilla extract
Sift the cornstarch and powdered sugar together. Grease a baking pan. Sprinkle 1 tablespoon of the sugar mixture into the pan and evenly coat the bottom and sides. Do not shake out excess.
Combine the gelatin with the water in a saucepan to soften. Let sit for 5-7 minutes. Stir in the sugar and heat over low heat, stirring, until dissolved. Combine the gelatin mixture, corn syrup, salt and vanilla with an electric mixer. Beat on high for 15 minutes until peaks form.
Spread mixture into the baking pan. Let sit until set, about 2-3 hours. Slice the mixture into desired sizes. Roll each piece in the cornstarch mixture. Place on paper towels and let stand until dry. Store in airtight container.
