Garden Patch Minestrone

I’m going to have to make this soup. It sounds as good as effective weight loss pills. You make it in a Dutch oven or stockpot and use a box of Hamburger Helper.

2 tbsps EVOO (Extra Virgin Olive Oil)
2 medium carrots – sliced (about a cup)
2 medium stalks of celery – sliced (about a cup)
1 small onion – chopped (about 1/3 cup)
2 cloves of garlic – finely chopped
1 medium zucchini or yellow summer squash, cut into 1/4 inch pieces
1/4 cup chopped fresh basil leaves or 1 tsp dried basil leaves or Italian seasoning
1 box of beef pasta Hamburger Helper
1 can (15 oz) dark red kidney beans – drained & rinsed
1 can (14.5 oz) diced tomatoes with basil, garlic and oregano – undrained
5 cups hot water

1. In a 5 quart Dutch oven or stockpot, heat oil over medium heat. Add the carrots, celery, onion and garlic and cook for about 5 minutes – stirring frequently until the veggies are almost tender.

2. Stir in the zucchini, basil, uncooked pasta and sauce mix from the Hamburger Helper box, beans, tomatoes and hot water. Heat to boiling. Reduce the heat.. cover and simmer for about 10 minutes or until the pasta and veggies are tender.

Prep time: 30 minutes Total time: 40 minutes Makes 7 1 1/2 cup servings.

Sausage Cheese Balls

Andi made something like this when she was in school and from what I remember they were delicious. I’ll have to make them and try them. They would make a nice snack when playing on the wii.

3 cups bisquick
1 lb bulk pork sausage
4 cups grated cheddar cheese (16 oz)
1/2 cup grated Parmesan cheese
1/2 cup milk
**Andi’s recipe didn’t have these. The picture I’m looking at shows them without them too**
1/2 tsp dried rosemary leaves (crushed)
1 1/2 tsps chopped fresh parsley or 1/2 tsp parsley flakes
Barbecue sauce or chili sauce .. if desired

1. Heat the oven to 350 degrees F. Lightly grease bottom and sided of a jelly roll pan (15 1/2 x 10 1/2 x 2 x 1 inch).

2. Stir all of the ingredients together using your hands or a spoon. Shape the mixture into 1 inch balls and place in the pan.

3. Bake for 20 to 25 minutes or until brown. Immediately remove from the pan. Serve warm with sauce for dipping.

Chicken Parmesan

I made a very quick and easy chicken parmesan for dinner tonight. I got Perdue chicken cutlets (there were 4 in a package) for $3.99 with a coupon for $1.00 off. I bought a jar of Prego spaghetti sauce and a bag of Kraft shredded mozzarella cheese.

I preheated the oven to 450 degrees F and lined a baking sheet with aluminum foil. I placed the cutlets on the baking sheet and put them in the oven for 5 minutes. Then I took the sheet out and put some mozzarella cheese on the cutlets then spooned on some sauce and topped them with some grated parmesan/romano cheese and put them back in the oven for another 5 minutes.

During the last 5 minutes I put a bag of corn in the microwave to steam for 4 minutes.

It was a delicious, quick dinner. It was better than you could get at the Sahara hotel. I have 2 cutlets left over and it will be easy to pop them in the microwave to reheat for another dinner.

My lasagna

dsc01563Last weekend I made my famous lasagna. It turned out so good that I was wondering if there is a franchise opportunity anywhere for this kind of thing.

Anyway.. here is how I make mine.

1 box of pre-cooked lasagna noodles
1 jar sauce
1 lb hamburger meat
onion
garlic
Parmesan cheese
shredded mozzarella cheese

Put a little olive oil in a frying pan and saute the onions and garlic. Then add the hamburger and cook until browned. Add the jar of sauce and stir until just heated.

I use an oblong glass baking dish and put in a little of the sauce/hamburger mixture and spread it evenly in the bottom of the dish. Then take 3 lasagna noodles and place 1 crossways and the other 2 lengthwise next to each other. Do another layer of sauce/hamburger mixture then sprinkle with the Parmesan cheese and a couple handfuls of the shredded mozzarella cheese. Do another layer of the noodles opposite the way you placed the first ones. (put the crossways one across the lengthwise ones). Do another layer of the sauce/hamburger mixture. Do another layer of the cheeses. Repeat the noodle, sauce/hamburger mixture and cheeses once more.

Bake at 350 degrees for 30 minutes. Let stand for about 5 minutes and serve.

Meatball hoagies

I love making my own meatballs and making hoagies with them. This recipe has no actual measurements because I just add things here and there and usually don’t measure.

2 lbs ground beef *lean*
2 eggs
bread crumbs
medium onion chopped
garlic *I used the garlic already chopped up in a jar* to taste. Usually about a teaspoon full.
Oregano

Mix all of the ingredients together and form into balls about the size of golf balls. Place them in a frying pan and cook until done. Then place them into a pan of your choice of spaghetti sauce until the sauce is hot.

Slice hoagie rolls in half length-wise and place several meatballs on it and top with sauce, provolone cheese and sprinkle with grated cheese.

Honey Mustard Dressing/Dip

This is good for either a salad dressing or for dipping chicken fingers. Honey Mustard is my favorite dipping sauce and salad dressing. Making it yourself is even cheaper than buying salad dressing on sale.

1/4 cup mayonnaise
1 tablespoon prepared mustard
1 tablespoon honey
1/2 tablespoon lemon juice

Whisk together mayonnaise, mustard, honey, and lemon juice In a small bowl. You can adjust the ingredients to taste. Store covered in the refrigerator.

This is something I think even my grandkids would love.
