Quick and easy hash browns

This is made using those frozen tater tots you can buy in the grocery store. You can make them even better buy adding chopped onion or other things to them.

You will need:

a bag of frozen tater tots or tater bites
Seasoned salt
Butter

Melt butter in a frying pan
Place tater tots in frying pan and when they start to unfreeze break them up into small pieces. (this is when you would add your onions, garlic, etc if you choose to)
Add seasoned salt to taste.
Fry the resulting potato pieces until browned on both sides.

I found I didn’t need any additional salt or other seasonings. It was delicious as is.

Beef Stew

Andi wants to get stuff to make beef stew. It’s one of my favorite things to make and eat in the fall and winter. I’m not exactly sure how she makes it but I’m sure it’s similar to mine. It won’t fatten you up but it’s not one of the fastest working weight loss supplements either.

I use:

1 lb of stew beef cut in chunks
several potatoes peeled and cut in cubes
several carrots peeled and cut in chunks
a large onion sliced
water
salt and pepper to taste
garlic powder
Kitchen Bouquet to darken the sauce
flour and water to thicken the sauce

I put the beef and vegetables in the crock pot in the morning along with enough water to cover most of the meat and vegetables. Add the salt, pepper, garlic powder and Kitchen Bouquet. Let it cook all day on low. When it’s done thicken the sauce with the flour and water mixture then serve.

You can serve it over noodles too.

Potato Pancakes

Here’s a delicious recipe that won’t have you looking for flight deals to find the ingredients to make it.

Makes 4 servings

2 large Idaho potatoes
1 egg, lightly beaten
2 tbsp. flour
1 small yellow onion – peeled and finely grated
1/4 tsp. baking powder
1 tsp. salt
2 tbsp. cooking oil

Coarsely grate the potatoes into a bowl of cold water and let them stand for 15 to 20 minutes. While you are waiting mix the egg and flour until smooth and stir in all remaining ingredients except for the oil. Drain the potatoes and squeeze them as dry as possible then stir them into the batter. Heat the oil in a large, heavy skillet over high heat for 1 to 2 minutes. Drop the potato mixture by spoonfuls into the oil, shaping them into 4 or 5 large cakes and flatten them slightly with a spatula. Cook for 1 to 2 minutes on each side then turn the heat down to low and cook the pancakes for 20 to 25 minutes .. turning frequently so they’re cooked through. Drain on paper towels and serve hot.

About 150 calories per serving.

What’s For Dinner Tonight?

crock_beefI went to the grocery store and picked up a nice top round roast and some carrots. I also got some Crockery Gourmet seasoning for beef. I put the seasoning in the Crockpot with 2 cups of water and stirred it up. Then I put in the 3 lb roast followed by a large onion cut up in chunks, 3 large potatoes, with the skin on, cut in chunks and several handfuls of baby carrots into the Crockpot. I put the cover on and put it on low where it will sit and cook for 7 hours.

I’ve never used that seasoning before so I thought I’d give it a try. It smells very good. They also have many other varieties for beef, chicken, pork, etc.
