That didn’t work out

I went to Shoprite on Saturday and didn’t find the pet hair remover I wanted. I searched the cleaner and pet aisles.. several times. I know I saw it.. somewhere. I’m going to check the other Shoprite and CVS tomorrow.

I don’t usually go to this Shoprite, but it’s a bigger one and I figured they would have it but I was wrong. I saw all kinds of things that my regular store didn’t have such as certain brands of paper towels, the best fat burners, certain flavors of ice cream, etc.

I have to go to CVS to pick up hubby’s meds so I’ll check there too so I can get this review I promised I’d do done.

Mmmm.. chocolate

With all of these recipes I’ve been posting containing chocolate I need to find a drug rehab for chocolate. Is there such a thing? Chocolate is my favorite food group. Yes.. I do consider it a food group although I can’t find anything on the NJ Dept of Health website saying the it is.

I’ll eat almost anything that contains chocolate.. except for maybe chocolate covered bugs (ewwwww gross). I love chocolate ice cream, chocolate covered strawberries, chocolate chip cookies… etc, etc, etc.

How about you? Are you a chocoholic too?

Baked apples with Peanut Butter

You may have to take a diet pill after eating this :) . I found this recipe on a Peanut Butter & Co. display in ShopRite.

Ingredients:

1/2 cup Cinnamon Raisin Swirl peanut butter
1/2 cup (1 stick) plus 4 tsps. unsalted butter – softened
4 large red apples, cored
4 tsps. sugar
Vanilla yogurt or ice cream for serving.

Directions:

1. Preheat oven to 300 degrees F
2. Mix the peanut butter and the 1/2 cup of butter, in a small bowl, until well combined. Spoon the peanut butter mixture into the hollow center of the apples, packing it in tightly. Top each apple with 1 tsp. of butter and 1 tsp. of sugar.
3. Set the apples in a baking dish with 1/4 cup of water and bake for 20 to 25 minutes, or until the apples are fully cooked. While they are baking, baste the apples once or twice with the juice in the bottom of the pan. Allow to cool for 5 minutes before serving with vanilla yogurt or ice cream.

Black Forest Ice Cream Parfaits

Yummy and quite calorie loaded… 701 calories per serving. You’ll need a diet pill or two after eating these!

2 cups fresh or jarred cherries, pitted
1 cup cherry flavored liqueur
4 oz high quality dark chocolate, shaved into curls
1/4 cup raspberry preserves
1 pkg dark chocolate Liebniz cookies, broken into 1 inch pieces
1 pint vanilla bean ice cream
4 fresh whole cherries with stems

1. Drain cherries and place into a medium glass bowl with liqueur. Allow to stand 1 hour to overnight.

2. Layer each of 4 parfait glasses with the cherries, chocolate shavings, preserves, cookie pieces and ice cream.

3. Top each parfait with a fresh, whole stemmed cherry and additional chocolate shavings. Serve immediately.

Makes 4 servings.

Dark Chocolate ice cream

Smooth, dark and super-rich but very easy to make. You’ll probably need to hop on your elliptical to work off all those calories!

1 6 oz package of semisweet chocolate bits
1 7 1/2 oz jar marshmallow cream
1 13 oz can evaporated milk
1 tsp. vanilla
1 cup heavy cream

Melt chocolate bits in the top of a double boiler over simmering water. Add the marshmallow cream and heat, stirring occasionally, until melted. Pour in the milk, a little at a time, mixing well after each addition. Then mix in the vanilla. Remove from heat and set aside. Whip the cream until soft peaks form and fold into the chocolate mixture. Pour into a 9x5x3 inch loaf pan and freeze until mushy. Remove from the pan and beat until fluffy. (NOTE: If you use a hand mixer you can do this right in the pan) Return to pan and freeze until firm. When serving, make the portions small.

About 700 calories per serving.
