Coming soon

My mom’s birthday is coming up soon. It’s June 24th to be exact and she’ll be 91 years old. I need to start looking for some birthday gift ideas for her. She lives in a nursing home so I can’t get her anything too extravagant or big.

I know she’d love some flowers or some fruit so I think I’ll look around and find something really nice for her. She loves strawberries so maybe some nice chocolate covered ones will do the trick.

I feel bad because I haven’t been able to make it to see her very often. Money is tight and gas is at a premium lately. I have to get her something really special for her birthday.

Sparkling Sangria

This is a good drink for a party on a warm summer night. It can be either alcoholic or non-alcoholic. I, personally, would make it with the orange juice. It shouldn’t take credit card processing in order to pay for the ingredients either.

2 limes
2 oranges
1 lemon
1/2 cup sugar
1/2 cup water
2 bottles (25.4 oz each) white Catawba grape juice
2 tablespoons orange-flavored liqueur or orange juice
2 cups sparkling water, chilled

Cut the ends off of the fruit. In 2-quart saucepan, mix the sugar and water then add the ends of the fruit. Heat to boiling and boil for 3 minutes. Cool; discard ends. Cut remaining limes, oranges and lemon into thin slices.

In a 3-quart non-metal container, mix the sugar/water mixture, grape juice and liqueur or orange juice. Add the fruit slices then refrigerate.

Just before serving, add the sparkling water and stir gently.

Granité

Granité (not to be confused with granite) is a granular ice frozen without being stirred. It can be served at the mush stage or frozen hard, then scraped up in fine, feathery shavings. It’s particularly good topped with a little fruit liqueur or rum. It sounds like something that might be served on one of those Caribbean cruises or in a fancy restaurant.

1 quart of water
2 cups of sugar
1 cup or lemon or lime juice
1 tablespoon finely grated lemon or lime rind
A few drops of yellow and/or green food coloring.

Bring water and sugar to a boil in a saucepan, stirring, then reduce heat and simmer, uncovered, 5 minutes. Cool, mix in juice and rind, and tint pale yellow or green. Pour into 3 refrigerator trays, cover, and freeze to a mush without stirring. Spoon into goblets and serve or freeze hard, scrape up with a spoon and pile into goblets. About 130 calories per 1/2 cup serving.

Fruit Granité: Boil 3 cups water and 1 1/2 cups sugar into syrup as directed. Cool, add 2 tablespoons lemon juice and 2 cups puréed fruit (any berries, peaches, pineapple, sweet cherries). Omit the rind. Freeze and serve as directed. About 140-150 calories per 1/2 cup serving depending upon fruit used.
