Today wasn’t a good day

Today wasn’t a very good day. I had a headache that felt like my head was a bout to explode. Nothing would touch it until I went up to my room and laid down. I had the room darkening shades pulled down and the TV volume on low. I got myself under the covers and it felt so good with eyes closed that I ended up falling asleep. That nap was the best migraine treatment I could have ever done.

I don’t really know if it was a migraine or not but my eyes hurt, my ears hurt and my whole face and head hurt. I woke up and it felt a whole lot better. It wasn’t a hundred percent but it was about 90 percent better. I hope I never get another headache like that again. I don’t like being in pain at all.

Cookies

This weekend I have to bake cookies for our Christmas party at work. I’m planning on making my famous chocolate chip cookies.. Well they aren’t really my famous cookies… I use the recipe on the bag of Nestle’s Chocolate Morsels. I just love the taste of them.

I hope all goes well this time. The last time I tried to make cookies my indoor lighting in the kitchen went out and it was too dark to make them. I have 2 really long fluorescent tubes above my cabinets and I don’t know when the last time they were changed. They both went out within a couple minutes of each other. Luckily I hadn’t gotten any further than getting everything out to make them. I hadn’t actually started them.

Black Forest Ice Cream Parfaits

Yummy and quite calorie loaded… 701 calories per serving. You’ll need a diet pill or two after eating these!

2 cups fresh or jarred cherries, pitted
1 cup cherry flavored liqueur
4 oz high quality dark chocolate, shaved into curls
1/4 cup raspberry preserves
1 pkg dark chocolate Liebniz cookies, broken into 1 inch pieces
1 pint vanilla bean ice cream
4 fresh whole cherries with stems

1. Drain cherries and place into a medium glass bowl with liqueur. Allow to stand 1 hour to overnight.

2. Layer each of 4 parfait glasses with the cherries, chocolate shavings, preserves, cookie pieces and ice cream.

3. Top each parfait with a fresh, whole stemmed cherry and additional chocolate shavings. Serve immediately.

Makes 4 servings.
