Yummy Chex Mix

This uses 4 kinds of Chex Cereals and wouldn’t be one of the best weight loss products but it sure looks good!

Prep time is 15 minutes and makes 18 1/2 cup servings

9 cups Corn Chex, Rice Chex, Wheat Chex or Chocolate Chex cereal (or a combination of any or all.

1 cup semisweet chocolate chips *

1/2 cup peanut butter

1/4 cup butter or margarine

1 tsp. vanilla

1 1/2 cups powdered sugar

1. Measure cereal into a large bowl and set aside
2. In a 1 quart microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on high for 1 minute. Stir. Microwave about 30 seconds longer or until the mixture can be stirred smooth. Stir in the vanilla. Pour the mixture over the cereal and stir until evenly coated. Pour into a 2 gallon resealable food storage bag.
3. Add the powdered sugar. Seal the bag and shake until well coated. Spread on waxed paper to cool. Store in an airtight container in the refrigerator.

* You can use peanut butter chips instead of chocolate chips

Cookies

This weekend I have to bake cookies for our Christmas party at work. I’m planning on making my famous chocolate chip cookies.. Well they aren’t really my famous cookies… I use the recipe on the bag of Nestle’s Chocolate Morsels. I just love the taste of them.

I hope all goes well this time. The last time I tried to make cookies my indoor lighting in the kitchen went out and it was too dark to make them. I have 2 really long fluorescent tubes above my cabinets and I don’t know when the last time they were changed. They both went out within a couple minutes of each other. Luckily I hadn’t gotten any further than getting everything out to make them. I hadn’t actually started them.

Chunky Rocky Road Brownies

Rocky Road Brownies Yummy, fattening, scrumptious brownies!

Prep Time: 15 minutes l Cook Time: 23 to 25 Minutes

Cooking Oil
1 cup flour
3/4 cup sugar
1/4 tsp. baking soda
2 eggs, beaten slightly
3 tbsps. water
1 tsp. vanilla extract
1/2 cup butter, cut into pieces
2 cups semi-sweet chocolate chips
3/4 cup chopped pecans
3/4 cup chopped walnuts

1/2 cup semi-sweet chocolate chips
2 tbsp butter
1 tbsp. heavy cream
1 1/2 cups miniature marshmallows

1. Preheat oven to 350 degrees F. Coat a 13x9x2 inch baking dish with oil, set aside. Stir together the flour, sugar and baking soda in a small bowl; set aside. Combine the eggs, 3 tbsps. water and vanilla in separate small bowl; set aside.

2. In a large saucepan, combine 1/3 cup butter and 1 cup chocolate chips. Cook over low heat, stirring frequently, until mixture is smooth. Blend in egg and flour mixture. Stir in 1 more cup of chocolate chips, pecans and walnuts. Spread in the pan you prepared earlier. Bake for 23 to 25 minutes or until a wooden toothpick, inserted in the center, comes out clean.

3. During the last 5 minutes of baking time, melt remaining 1/2 cup of chocolate chips, 2 tbsps. butter and cream in a small saucepan over low heat, stirring frequently.

4. Sprinkle marshmallows over brownies as soon as they are finished baking. Return to oven for 30 seconds or just until the marshmallows puff; remove from oven. Drizzle with the chocolate mixture; swirl lightly to mix marshmallows and chocolate. Cool completely.
