Andi is moving

When Andi got back from Kuwait she needed a place to live in a hurry so she rented a single wide trailer in a trailer park. She’s hated it since she moved in. This weekend she is moving into a house. It’s actually a house her and her ex had and it’s been up for sale. She talked to her ex and he told her to move into the house and just pay the mortgage (which is cheaper than any rent she would have to pay). So Andi is moving this weekend with a lot of help from friends at work.

Andi isn’t supposed to do a lot because she’s pregnant and has had some problems with spotting. Her friends are going to do the biggest part of the moving starting with her self storage unit and the stuff she has in the trailer. She hasn’t unpacked much at all in the trailer. She’s going to pay them with pizza and beer!

She’s so excited and can’t wait to move.

Can’t think of a title

We just got home from a trip to Texas to take our grandsons down to their mom. This trip I didn’t have a notebook computer to take with me. I really missed it and I missed my home computer. Hubby asked me how much laptops cost and I told him that I could get one for well under $1000. He told me that if I’m a good little girl that santa might bring me one this Christmas.

When we got home I looked on the Dell website and can get one for just under $800. If I check out other places I could probably get one even cheaper.

It will be nice to have a laptop for traveling or even for at home when I just don’t feel like sitting at my desk.

Batter Blaster

batterblasterI went grocery shopping this morning and saw the neatest thing on the shelf near the eggs. It’s called Batter Blaster and it comes in an aerosol can like whipped cream.

I brought it home and decided to try it out and have waffles for lunch. I sprayed some Pam on the waffle plates and shook the can of batter, turned the can upside down and pushed the nozzle. It couldn’t have been easier.. no mess.. no mixing and best of all the waffles came out so nice and fluffy.

I was so engrossed on tasting the waffles that I forgot to take pictures.. but I did take a picture of the can afterward. You should try it! It’s so easy and tastes so good.

Curiosity

colorful-pills-01I take several different medications every day. Some are prescription and some are OTC. I take levothyroxine for my thyroid, Centrum Silver, 600 mg calcium twice a day and Seroquel to help me sleep at night and for depression. At least once a day I end up having to take some Tylenol Arthritis for my aches and pains.

I was wonder what you take every day. Is it something OTC or a prescription or diet pills that work?

I’m just curious if I’m the only pill popping fool here. I used to take more than what I take now but don’t take any pain pills or muscle relaxers other than my Tylenol Arthritis.

Bacon Muffins

I was just looking through an old cookbook and stumbled across a recipe for BACON muffins! I’ve never heard of them before and I’m going to have to get the ingredients and give them a try. I’m a HUGE bacon fan!

2 cups plus 2 tbsp. sifted flour
1 tbsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1/4 cup minced crisp bacon
1 egg
1 cup milk
3 tbsp. cooking oil, melted butter or margarine

Preheat oven to 425 degrees F. Sift the dry ingredients into a mixing bowl. Add bacon and toss to dredge. Lightly beat egg and milk with 2 tbsp. each of cooking oil and melted bacon drippings. Mix into dry ingredients by making a well in the center of the dry ingredients and pouring the egg mixture in all at once. Stir lightly and quickly just to mix.. batter will be lumpy. Spoon into muffin pans.. the bottoms of the cups should be greased but not the sides.. filling each cup 2/3 full. Bake about 20 minutes until lightly browned.

Serve hot from the oven with plenty of butter!

About 115 calories per muffin (without butter).

Chunky

My clothes are getting tight on me. I’m not too thrilled about it. I either need to start using some Solo Slim or get my self back on the elliptical. I think the latter is the better choice for me right now.

I haven’t used the elliptical in months. I say I haven’t had the time for it but the truth is I’ve just been lazy. I just have to force myself into a regular routine and get myself back on track and back into my clothes. I can’t afford to buy new clothes and I don’t really want to buy bigger ones!

Extra dark Chocolate mousse

dk-choc-mousseThis is a very rich and delicious dessert and you won’t have to take any Vegas vacations to get it. You just make it right in your own kitchen.

4 (1 ounce) squares of unsweetened chocolate
2/3 cup of sugar
1/4 cup of heavy cream
1/8 tsp. salt
2 tbsp. hot water
5 eggs – separated
1 tsp. vanilla
1 tbsp. cognac or coffee liqueur
Whipped cream (optional for topping)

Place the chocolate, sugar, cream and salt in the top of a double boiler. In the bottom of the double boiler bring water to boil and turn down until it simmers. Place the top part of the double boiler on the bottom part and heat while stirring occasionally until the chocolate is melted and the sugar is completely dissolved. This will take about 20 minutes. Add the hot water and heat, stirring until smooth and satiny. Beat in the egg yolks (1 at a time) and remove at once from the heat. Beat the egg whites to form soft peaks. Mix about 1/2 cup of the egg whites into the chocolate mixture. Lightly fold in the rest taking care not to break down the volume. Mix in the vanilla and cognac. Cover and chill for 12 hours before serving. Optional – top with dollops of whipped cream.

Makes 4 servings. About 445 calories per serving without the whipped cream.

Did you know?

Did you know you can make your own marshmallows? I didn’t know that until I came across a recipe for it. It sounds yummy and won’t cause you to use your mortgage life insurance.. I promise!

1/4 cup cornstarch
1/3 cup powdered sugar
1 envelope unflavored gelatin
1/3 cup water
2/3 cup granulated sugar
1/2 cup light corn syrup
1 pinch salt
1 teaspoon vanilla extract

Sift the cornstarch and powdered sugar together. Grease a baking pan. Sprinkle 1 tablespoon of the sugar mixture into the pan and evenly coat the bottom and sides. Do not shake out excess.

Combine the gelatin with the water in a saucepan to soften. Let sit for 5-7 minutes. Stir in the sugar and heat over low heat, stirring, until dissolved. Combine the gelatin mixture, corn syrup, salt and vanilla with an electric mixer. Beat on high for 15 minutes until peaks form.

Spread mixture into the baking pan. Let sit until set, about 2-3 hours. Slice the mixture into desired sizes. Roll each piece in the cornstarch mixture. Place on paper towels and let stand until dry. Store in airtight container.

makes 3 cups
