Cherry Batter Pudding
Another recipe from my grandmom’s collection:
1 1/2 cups cake flour
2 tsps. baking powder
1/2 tsp. salt
1/3 cup shortening
3/4 cup sugar
1 egg
1/2 cup milk
1 1/2 cups red sour cherries - fresh or canned, pitted
Sift the flour, measure then add baking powder and salt and sift again. Cream shortening then add the sugar gradually and continue creaming until light and fluffy. Add the egg and beat in thoroughly. Add the dry ingredients alternately with the milk, stirring just enough after each addition to blend. Fold in the cherries (if you are using the canned cherries make sure they are well drained). Pour into a greased square baking pan (8 x 8 x 2 inches). Bake in a moderate oven (375 degrees) until done… about 45 minutes. Serve upside down with nutmeg sauce *recipe below*.
Makes 6 to 8 servings.
Nutmeg sauce:
Mix 1/3 cup of sugar, 4 tsps. cornstarch and 1/8 tsp. of salt in a saucepan. Add 1 cup of boiling water and cook for 3 minutes until clear and thickened. Remove from heat and stir in 2 tbsps. of butter and 1/8 tsp. of nutmeg.

Hmmm I think the person who commented before me may soon find themselves off the do follow blogroll. I’ve talked to them about leaving extra links and using tiny url(no reply). Grrr.

That sounds awesome. I’ve been picking up some great cherries from the produce section of my grocery store recently, so this recipe is very timely. Thanks!
